The Vegan 8 Thanksgiving Roundup

I can’t believe it’s already Thanksgiving! It seems the years just get faster and faster, especially as a Mommy. I find myself wishing time would slow down. But, of course that doesn’t happen. This week sure isn’t any exception. So, to make things easier for you, so you enjoy the day with your loved ones, I have put together a Thanksgiving roundup of posts that are ALL 8 ingredients or less! Your day can be easy, I tell ya!

Let’s get to it.

Every recipe listed here is 8 ingredients or less, vegan, gluten-free and oil-free. Just click the orange highlighted titles to get to the recipe.

First up:

BREAKFAST: I know typically Thanksgiving is all about the dinner. But why not start off your day with the best pancakes on the planet or some Pecan Pie for breakfast, in crostini form. That’s what I thought.

Life Changing Pancakes    Yes, these really are. Just check out the reviews. It has become my most popular recipe to date.

Pecan Pie Crostini     Just 5 ingredients and it really will remind you of pecan pie.

Cinnamon Roll Spice Oatmeal    What is Thanksgiving morning without a cinnamon roll? Well, forget the rolling and yeast setup time and just get to a hot bowl of oatmeal instead.

SNACKS: You gotta have something for your guests to munch on while they wait for the big meal right?

Fresh Raw 10 Minute Salsa    It takes just 10 minutes to make and is delicious.

5 Minute Gee Whiz   You have to have a nacho cheesy dip too, it’s a must. And one that takes just 5 minutes? Yeah!

Spinach Pea Pesto    I love to always have a great dip served alongside veggies for guests. This one is perfect and everbody always loves this pesto.

SIDES:

Magic Skillet Cornbread     This cornbread is so buttery thanks to pecans doing some magic. It is perfectly flavored so it can be topped with either sweet or savory sauce.

Ranch Potato Salad   A wonderful, filling potato salad with the flavor of ranch dressing all over it. I offer 2 options on this one, but for a crowd and special holiday, I would definitely recommend doing a full plant milk version and not the water. It is richer.

Fluffy Buttermilk Mashed Potatoes     Thanksgiving hasn’t even started and you guys have gone crazy making these potatoes….and for good reason. They are simply flavored, fluffy and just downright delicious.

Thyme Cabernet Gravy     Of course, you have to top the best ever mashed potatoes with the best ever gravy, right? You have all agreed the gravy is simply drink-worthy. Thanks to everybody who has already been making it!

DESSERTS:

Apple Cinnamon Pecan Crisp   Easy and incredibly delicious, a crowd pleaser. Best served straight from the oven. I just realized that this is the only recipe on here that isn’t 8, it is 10 ingredients. Sorry, it is still so easy, so forgive me!

Cinnamon Ice Cream   What is a crisp without ice cream?

Chocolate Gingersnap Mousse Pie     This one needs no introduction. I served this last year and 2 people who claimed to hate coconut had NO clue it was in there and lovvveed it. It is creamy, rich and the odd combo of spicy ginger and chocolate works remarkably well. Go buy yourself some already premade gingersnap cookies to crumble on top. You won’t regret it.

Cinnamon Coconut New York Style Cheesecake     Nobody will believe this is dairy-free. Trust me. It is silky smooth and just divine. This one is no-bake and super easy. It does require chill time in the fridge, so I would make it the day before.

Cinnamon Spice Cheesecake Tart    One of my most popular recipes. You don’t even have to turn on your oven. This one was also made last year by several readers and all the non-vegans declared it a hit! This one also requires freezer time, so make it the night before.

Caramel Crusted Pumpkin Loaf with 2 Minute Caramel Spice Glaze     This one has already been a big hit since publishing it just last week. Who wouldn’t love a crispy coated pumpkin loaf with a spicy caramel glaze on top?

So, that’s it. While I could have selected more, I didn’t want to overwhelm you. You can always easily scroll my recipe index if you want more ideas, but these were some great ones that I thought fit perfectly for the holiday. There are many, many more desserts and snacks to choose from.

    Oh my!!! I seriously want to eat that chip with salsa, those potatoes, that ice cream and that pumpkin loaf right off the screen. Everything looks amazing and so so beautiful!
