While I have a traditional from-scratch homemade Vegan Ramen Noodle Soup already on the blog, sometimes you just want super fast, quick, simple and convenient, right? This recipe delivers on that!
Simply make the vegan ramen seasoning powder with several spices and add to vegetable broth and soy sauce, and in about 5 minutes, you have homemade ramen soup!
You must make this amazing smoked tofu to go along with it, too.

Homemade Vegan Ramen Seasoning
Ingredients
RAMEN SEASONING
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 1/2 tablespoons onion flakes
- 1 tablespoon dried parsley
- 1 tablespoon dried green onions
- 1 tablespoon coconut sugar (use regular if you don't have this)
- 1 teaspoon ground ginger (use 1 1/2 teaspoons if you want it spicier)
- 1 teaspoon toasted sesame seeds
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 2 teaspoons fine sea salt (I used Himalayan pink salt)
- 1/4 teaspoon ground black pepper (use 1/2 tsp for spicier)
HOW TO MAKE THE RAMEN SOUP
- 1 1/2 cups low-sodium vegetable broth
- 1 tablespoon of the above ramen seasoning
- 1 teaspoon low-sodium soy sauce
- 1 2 oz package ramen noodles (see NOTES at bottom)
- optional veggies: I added sweet red bell peppers, green onions, baby bok choy and smoked tofu. SO GOOD
Instructions
- Add all of the spices under "ramen seasoning" to a bowl and mix VERY well.
- To make the soup, bring the broth to a simmer over medium heat. Once simmering, add the 1 tablespoon of the ramen seasoning, 1 teaspoon soy sauce and the ramen noodles.
- Mix up the noodles with a fork and cook for about 4 minutes until tender.
- Add any toppings you like. I added sweet red bell peppers, green onions, baby bok choy and this smoked tofu. I roasted both my bell peppers and bok choy so it added a smoky flavor to the soup, but you don't have to do this.

Made the ramen seasoning around lunchtime & put in glass screw lid jar. Decided to make for my tea, just had to try. I followed recipe but only had 2 minute noodle so that’s what I used. Added book Choy, red capsicum, & chives @ end. It was wonderful, really delicious, thankyou

Can you show us a picture please? I cant fimd them anywhere locally. I found dried chives but they dont seem tl be the same
Hi Melissa! I can’t post pics in the comments, it won’t let me. Dried chives are basically the same, so you can use those. As long as they aren’t fresh, they are fine. They are also called freeze-dried which is sometimes in the produce area. Those work, too.
I didn’t have the green onions, so I doubled the onion powder. It still turned out to be delicious and authentic. Just a thought for anyone who can’t find the green onion in your grocery store…
Dried green onions are available at Amazon.com. I get the Litehouse brand described as dried “spring onions.” They’re very good. Sometimes I buy a bunch of fresh ones at the store and keep them in a tall glass of water, if I’m going to be using them for a few recipes. But, I ALWAYS keep a couple of jars of the dried green/spring onions on hand, just in case! My husband uses them a lot on a tuna & bean salad he makes, too.
I used to make an asian style coleslaw using packaged ramen and can not wait to try it with these spices. How much so you think would be equal to one of those little packages?

Is this a one-serving recipe?
No, it makes a lot, as you only use 1 tablespoon of the mixture, (see step 2). I believe it makes enough for 8 ramen soup bowls.
I used dried chives in place of green onions but yuuuummm!!! I’m kind of obsessed. And I didn’t even add anything but the noodles (lazy). But next time I’m going to add mushrooms, tofu and some fresh chives.

YUMMY!!!! I was looking for an alternative to the high sodium packets that come with the ramen noodle package. The combination of spices really did the trick. I modified and added sweet chili sauce instead of the sugar and it worked out amazingly. I also had homemade bone broth and used that.

Hi! That will depend on which brand of noodles you use and broth. Since one serving is one packet of noodles, just look at the back of the package of your noodles. And of course factor in the broth you used, etc. This will greatly vary of course by whatever toppings you add as well.

This is a perfect alternative to the seasoning packets that come with ramen. We used the brown rice ramen noodles from Costco. I added a little umami powder from TJs to the mix. My kids LOVED this!!!

I was making the seasoning and it smelled so good, but i wanted to know what I can substitute for the green onion because i’m allergic to green onion.

Dried Chives?
Brandi today after making food for tomorrow I needed something quick and easy to make for dinner. I’ve made this before and had 1 tablespoon of the seasoning left. Perfect! Along with the Ramen noodles, I added what I had in the frig: Carrots, red & orange bell peppers, Kale, zucchini, broccoli florets, red cabbage and diced tofu. I added a little bit more broth since I had so many veggies. This soup hit the spot tonight. Delicious Ramen soup. Thanks Brandi!!
This mixture is a perfect tasty blend and has even replaced my spice pack in standard ramen packages. In order to blend the spices well I put everything into a bowl with the exception of the sesame seeds, dried parsley, onion flakes and dried chives, then I shook them all through a sieve and then I added the larger spices to the sieved mix and blended with a whisk.
This really works!! My 10 years old son loves it too.
