WOW! Very good, the caramel sauce is a nice addition! And the muffins are SEW tender.
It is such an easy recipe, using weights is a guarantee that it will come out perfect!
SWEET!!! OM…when you are not used to eating sweets, I’m hoping that I can reduce the maple syrup successfully??

Love these muffins. My daughter and I just made a double batch so that people could take them home after Thanksgiving dinner! For those that don’t want to open a can of garbanzo beans (chickpeas), after I use the liquid I roast the beans and use them in my salads. Win win. Thanks again for this recipe!

Yay! So glad you loved these and my spice mix! Wow $6 is high. Where are you buying it from? Yes, I think applesauce should work! It’s slightly more wet than pumpkin but I would use the same spices. It’ll taste like an apple cinnamon muffin moreso. Yum.

Loved loved loved these! But I cannot get anymore canned pumpkin!!! (Not paying $6/can! Could I sub applesauce? Would I use the same amount of spice? BTW your homemade pumpkin pie spice is SOOO much better than store bought!

So glad you and your hubby loved them! Mine always rise really high like in the photo above. Did you use homemade oat flour? That can be a cause as well as over mixing or maybe it was the pinto brine instead? Not sure but so glad they turned out delicious.

Made them as muffins using a scale. They did not have the pretty muffin dome, a little flatter. The caramel sauce also baked in to the muffins. The flavor was excellent-my meat eating husband had two! Might use a little more flour to give them extra rise. Will definitely make again.

Yes, I think that should be fine. I’ve only ever used chickpea brine, but I imagine it would be very similar! Let me know after you try it!
